Wow, that roast looks GREAT. Got my stomach to growling. Perfect idea for Christmas dinner, too. Thanks for taking the time to post all of the prep details and pictures!

Bone In, Center Cut Pork chop (1 3/4 inch thick), with a 12 hour, Garlic & Apple Cider Brine, Glazed with a Cranberry-Pineapple Compote, GRILLED!

Sweet and tangy on the outside, and savory pork goodness on the inside...with some grill-char hash marks to hold it all in check...




look closely at the slice to see how moist and tender this is...beauty is in the detail!

Big Lou's Pizza that my family shared on Black Friday...
It was one of the places visited by the food network's "Man vs. Food" in San Antonio...

No muss, no fuss...

This one is the big 42. There's a 60 incher too...



My brother,his wife and 2 sons, my oldest son, his wife and their son, my wife and I couldn't even eat 1/2 of it...


For Thanksgiving, I smoked a turkey and 2 hams and fried one turkey...
No leftovers. the family divied up all that was left

Thanks to Luv2LafMcc's original post in this thread I bought a digital "remote style" thermometer while I was out today. Planning to try to follow his instructions to make a roast beef for our Christmas dinner. Thanks, Luv2LafMcc!

FYI - Any half way decent digital thermometer will work, and is a basic necessity in my opinion. Below are the ones i own and use :
